With humble beginnings as what started as Australia’s first chocolate and soda fountain shop in Pitt St, Sydney in 1914, at Ernest Hillier we are proud to still be carrying on the tradition of Australia’s first and oldest chocolatier, making chocolates for Australians for over 95 years. It all started in San Francisco, USA, Ernest Hillier and his wife Mary Magdelene, emigrated from the UK. There he trained to be a confectioner under the master chocolatiers.

Upon moving to Sydney, he was appalled by the quality of chocolates being imported and dared to make chocolate, something never before attempted in his young adopted country. In particular he wanted to keep Australia up to date, with the confectionery trends he witnessed on the West Coast of America. Ernest Hillier managed to combine both old world traditions of European fine chocolate-making, and the progressive confectionery culture that was prevalent in North America. At present, we continue to manufacture in our Melbourne factory, and remain proudly and wholly owned by an Australian family.

Our goals true to Ernest Hillier, has expanded to take a leading position in the manufacture and supply of quality chocolate in Food Service, Corporate, Contract Manufacturing, and Export. This resulted in the acquisition of the iconic Australian confectionery company “Newman’s”, followed by successive plant and machinery upgrades bolstering our traditional production facilities still in use since the 1920’s. We have offices in Melbourne, Sydney, and Brisbane. Ernest Hillier has an established distribution network Australia wide, selling our products via a network of local, and independent trade partners.

Since 1914 Ernest Hillier has provided delectable premium quality chocolate gifts of the highest quality. The following extract from our very first sales presentation exemplifies this tradition...

Every care is taken in packing so that each box leaves with the assurance of reaching it's destination in the same splendid condition that characterises it's advance through various stages of manufacture."
